So I'm watching Baby Geniuses. This stuff, to me, is so boring, but my kids love it. They laugh at it and yell at it. It's cute.
I want to post a recipe for you all.
Lasagna Roll-Ups
(Really great if you don't like the prep for lasagna and if there's only a few of you eating. I will forever stick to this recipe because it is so much better.)
6 lasagna noodles, cooked al dente and drained
1/4 pound ground beef (optional)
2 TBSP chopped onion
1 Garlic clove, minced
1 can (16 oz) crushed tomatoes
1/2 TSP salt
1/2 TSP dried oregan
A dash of cayenne pepper
1/4 cup grated parmesan cheese
1 egg, lightly beaten
1 TBSP minced fresh parsley
1/4 TSP onion powder
1 1/4 cups cottage cheese, drained
1/2 cup shredded Mozzerella Cheese
In a skillet cook ground beef with the onion and garlic until meat is no longer pink; drain.
Add tomatoes, salt, oregano and cayenne pepper and simmer for 10 minutes.
Spoon half of the meat sauce into a greased 9-in. square baking dish.
Combine the cottage cheese, Parmesan cheese, egg, parsley and onion powder; spread 1/4 cupful on each noodle.
Carefully roll up and place seam side down over meat sauce. Top with remaining meat sauce. Sprinkle with mozzarella cheese.
Cover and bake at 375 degrees F for 30-35 minutes or until heated through. Let stand 10 minutes before serving.
I actually made these way differently than this recipe, but I wanted to give you something to follow. What I did was cooked the ground beef with onion and garlic and added spices to it and simmered for 10 minutes. Then I took my noodles, and spread a thin layer of Mascarpone cheese on the noodle. I layered hamburger down the middle of the noodle, added Mozzerella and Parmesan cheese on top, then spread with pasta sauce. I rolled them up and put them in the pan and covered with the rest of the spaghetti sauce and Mozzerella cheese. I did not add the cottage cheese or mix the other cheeses. It was still very tasty.
These can be made without hamburger. Just put spinach in place of it. Everything else is the same.
This makes a lovely meal for just two, by the way!
(I am actually considering this for dinner tonight because it is so amazing. I used to not make lasagna because with only two of us, it goes to waste. This is the perfect way to still have something similiar to lasagna and have the perfect portion size!)
